Asian salmon with creamy zucchini noodles

Here's a recipe for Asian salmon flavored with miso, soy and honey. It's a combination that will make your taste buds rejoice, and it goes brilliantly with zucchini noodles, quinoa and a creamy herb sauce. The recipe takes less than an hour to prepare and is packed with nutrients.

Asian salmon recipe

For 2 persons
Cooking time: 40 minutes

Ingredients:
2 pieces of salmon fillet (about 500g in total) without skin
2-3 courgettes
2 dl quinoa
sesame seeds

For the miso marinade:
½ dl miso
3 tbsp soy sauce
2 tbsp honey

For the creamy herb sauce:
½ dl Greek yogurt or sour cream
½ dl mayonnaise
1 pot of fresh coriander
1 clove of garlic
1 tbsp miso
1 tbsp honey
1 tbsp lime juice
Salt and pepper to taste

Do this:
1. set the oven to 200C. Cut the salmon into 2 cm thick cubes. Mix together all the ingredients for the miso marinade, then mix in the salmon cubes so that they have plenty of marinade around them. Place the salmon on baking parchment, sprinkle with sesame seeds and place in the oven for 15 minutes.
2. Cook the quinoa according to the packaging. Tip! I always add a chicken stock as well, which gives the quinoa an extra tasty and rich flavor.
3. Blend all the ingredients for the herb sauce in a blender, then pour into a bowl and it's ready to serve.
4. Using a potato peeler, make "Tagliatelle" out of the zucchini until you reach the center - avoid the middle part as it is mushy. Put the tagliatelle in the herb sauce so that it takes on the flavor of the sauce.
5. Put everything on a plate and dig in! This dish is equally good cold, hot or lukewarm.

Two healthy ingredients for pregnant women:

Salmon is full of Omega 3, which is particularly important for the fetus when you are pregnant, it is a nutrient that is not easily found in other foods. Choose farmed salmon and avoid wild-caught salmon from the Baltic Sea, the Gulf of Bothnia, Lake Vänern or Lake Vättern.

Quinoa is a seed that is full of protein, fiber and iron. It contains, among other things, calcium and magnesium, which are important to get during pregnancy. For vegetarians, this is a great way to get protein!
